Our own exclusive house espresso sourced and roasted by Assembly in Brixton.
We’ve worked with Assembly since we opened in 2017 and they source and roast an exclusive Lot of beans just for us. These beans are grown and processed by the amazing Mió of Brazil before being shipped to Brixton for roasting.

Dominant Flavour Profile: Caramel, Roasted Nuts, Fruity
Varieties: Yellow Catucaí, Arara, Mundo Novo
Processes: Natural, Volcanic Fermentation
- Natural - This dry process is considered the most eco-friendly coffee process, using little to no water. The result is a sweet coffee with a creamy mouthfeel.
- Volcanic Fermentation (72hrs)- Coffee cherries are fermented in small mounds covered for 72-hours using Saccharomyces cerevisiae as a starter yeast. The result is a clean and sweet profile with creamy mouthfeel and delicate citrus acidity.

Resting period: 4-68 days in wood silos; 15 days in bags
